For to Make a Brede of Penenote Buttere and Gelé, Ful Worthy for Lordes

Some hae meat and canna eat, And some wad eat that want it; But we hae meat, and we can eat, Sae let the Lord be thankit.

Take fayre brede of whete, y-baken of the same day if it may be, and y-sliced evene as a squyre’s othe.

Take thenne buttere of penenotes, grounde passing smothe, and warme it a litel by the fyre till it be of a gentil disposition. If it be rebel and over-thikke, chastyse it with a drope of oyle or hony til it obey.

Spred it upon oon brede with a knyf of silver (or of no baser metalle than pewter, on peyne of grete shame).

Take after gelé of fruyt—of grape, or of strawberye, or other swete conserue—and laye it upon the tother brede, but with mesure and courtly restraint, that it flee not upon thy fingers like a villeyn escaped.

Thenne set the two peces togeder, buttere and gelé y-met as lord and lady in acorde.

And thenne (marke this wel): wrappe the brede in clene lynnen, and lay it in a cool celere for the space of three dayes and three nyghtes, that the humours may commune and waxe of oon complexion. Disturbe it not, save only to turne it at even-song.

Whan the tyme is fulfilled, take it forth and kutte it on the diagone, for that is the cutte of grete lordes and straunge dignité.

Serve it before Prime unto a duke or other worthy persone, with a napkyn y-folded proper, and a page to bere witness of thy craft.

And if no duke be at honde, thenne serve it to thyself with as moche gravité as thou mayst feigne.

 

And thus it is y-made, to grete merveyle and litel profit.
